Prosecco is a sparkling dry wine made in the Veneto region of Italy, originally from a grape named Prosecco, now known as Glera. Like Champagne it undergoes two fermentations under the Charmat method, in which the secondary fermentation takes place in stainless steel tanks. The style has moved away from the sweeter styles often associated with Italian bubbles.
